crumbled sausage
The sausage casing is removed and the loose pieces are used. They are not chopped. They are broken up, as Ross stated in his answer. But for the name of the dish, it sounds nicer to say "crumbled".

Butifarra esparracada

"Chopped" sounds more elegant, but, like Pina, my wife (who's Catalan) seems to feel it's a less accurate description of what's involved.

PB Trans
: I agree with your definition (broken up sausage). However, I don't agree with the "agreers". "Chopped" implies using a knife.
