Dies sind die sehr heißschmeckenden Stege/Leisten, an denen die Saat in einem Pepperoni/Pepperocini befestigt ist, welche meistens vor dem Essen herausgeschnitten werden.

seed core

Pepperoni would be capsicum.

My favorite method for trimming bell peppers hardly disturbs the seed core at all, which means I don’t have many errant seeds to chase off the cutting board.
Begin by cutting off the bottom off the pepper and then stand it upright on the cut surface.
Now imagine the sides of the pepper are a box surrounding the seed core and cut off the four sides of the box, leaving the seed core and stem in one easily discardable piece. Trim the pithy white ribs from the sides and base, if necessary, and then slice or dice as needed.

Scrape out the seeds, core and any white pith connected to the flesh. Depending on the size and density of your pepper, use a small vegetable peeler, spoon or paring knife to seed a pepper and scrape out the sharp-tasting pith.

agree Armorel Young : And Phil is right - pepperoni can't be used in this sense in English, because in English it is "a beef and pork sausage seasoned with pepper"
