I'd like to track the changes I make in a document that I have to review. However, I don't want to see this changes marked in the segments.

Is this possible?

"Final mode" is what you're looking for.
You'll find the icon in the Review tab

No Markup in 2022 Feb 4, 2022

I got on the right track with Emma's 2015 answer, thank you!
The 2021 version now has a dropdown on the Review tab to let you select
* No Markup (Final)
* Show Original (well, original) and
* Show Markup (show changes)
